The 70 cm oleary discs are essential components for those looking to extract high-quality olive oil using traditional methods. Unlike fiscoli made from coconut fiber, these are constructed from 100% food-grade polypropylene synthetic fiber, ensuring hygiene, durability, and reliability over time.
These discs form the basis of the pressure system: they are circular steel plates with slightly raised and shaped edges, equipped with a trolley for easy handling. At the center is a perforated cylinder (foratina) that keeps the stack vertical and facilitates the flow of the oil must along the entire central axis, optimizing extraction.
How the extraction cycle works:
- On the first disc laid at the bottom of the plate, a layer of olive paste 3 cm thick is placed inside the double fiscolo
- A second disc and a second layer of paste are overlaid, repeating the process
- Every three layers of paste, a disc without paste and a steel disc are interposed to distribute pressure evenly
- The complete stack consists of: 60 alternating discs, 60 layers of paste, 20 steel discs, and 20 discs without paste
- The tower is placed in the press: the oil must separates from the solid fraction and flows outward and through the foratina
- After extraction, the stack is disassembled, and the pomace undergoes vertical centrifugation to completely separate oil and water
