How the Extraction System Works
The oleary disc is the heart of the extraction system. A circular steel plate with shaped sides is used, wheeled for easy handling. At the center, a perforated cylinder (foratina) is positioned to maintain the vertical structure and allow the drainage of the must along the entire central axis of the stack.
The Assembly Process of the Stack
The construction of the stack follows a precise and tested sequence:
- On the first diaphragm at the bottom of the plate, a layer of olive paste of 3 cm thickness is placed inside the double mat
- A second diaphragm and a second layer of paste are alternated
- Every three layers of paste, a diaphragm without paste and a steel disc are overlapped to evenly distribute the pressure
The final stack consists of 60 diaphragms alternating with 60 layers of paste, plus 20 steel discs and 20 diaphragms without paste.
From Extraction to Finished Product
Once assembled, the tower is placed in the press. During pressing, the oil must separates from the solid fraction and, thanks to the draining system, flows outward and along the foratina, collecting on the plate. Once extraction is complete, the stack is disassembled and the pomace is removed from the diaphragms. The obtained must is finally subjected to vertical centrifugation to completely separate the oil from the water.
