How the Pressing System Works
The oil pressing disc is the heart of the extraction system. A circular steel plate with shaped edges is used, mounted on wheels to facilitate movement. In the center, a perforated cylinder (foratina) is positioned to maintain the vertical structure and allow the must to drain along the entire central axis of the stack.
The Stack Assembly Process
The construction of the stack follows a precise and tested sequence:
- On the first diaphragm at the bottom of the plate, a layer of olive paste 3 cm thick is placed inside the double mat
- A second diaphragm and a second layer of paste are alternated
- Every three layers of paste, a diaphragm without paste and a steel disc are overlapped to distribute the pressure evenly
The final stack is composed of 60 diaphragms alternated with 60 layers of paste, plus 20 steel discs and 20 diaphragms without paste.
From Extraction to Finished Product
Once assembled, the tower is inserted into the press. During pressing, the oil must separates from the solid fraction and, thanks to the draining system, flows outward and along the foratina, collecting on the plate. After extraction, the stack is dismantled and the pomace is removed from the diaphragms. The extracted must is finally subjected to vertical centrifugation to completely separate the oil from the water.
