The oleary discs are essential components in the traditional olive oil extraction process. Made from 100% food-grade polypropylene synthetic fiber, they represent the modern evolution compared to coconut fiber fiscoli, ensuring greater durability and food hygiene.
These circular steel discs feature shaped and slightly raised edges, designed to perfectly contain the olive paste during the stack construction. The structure is trolley-mounted for practical and easy handling, ideal in both modern and traditional oil mills.
At the center of each disc is integrated a perforated cylinder (foratina) that performs two crucial functions: it keeps the stack perfectly vertical throughout the pressing process and promotes optimal outflow of the oil must, both along the central axis and the outer edges of the structure.
How it works in the processing cycle:
- On the first diaphragm, positioned at the bottom of the plate, a 3 cm layer of olive paste is placed inside the double fiscolo
- In sequence, a second diaphragm, a second layer of paste, and so on are overlapped
- Every three layers of paste, a blank diaphragm and a steel disc are inserted to evenly distribute the pressure
- The final stack consists of 60 diaphragms alternating with 60 layers of paste, 20 steel discs, and 20 diaphragms without paste
- Once inserted into the press, the oil must separates from the solid fraction and flows onto the plate through the drainage system
- After extraction, the stack is disassembled and the pomace is easily removed from the diaphragms
- The must then undergoes vertical centrifugation for the final oil-water separation
