Purpose
This filter is perfect for removing suspended particles that cloud wine, must, and other food liquids such as beer and vegetable oils. Thanks to its simple construction and natural drop filtration, it is particularly appreciated in small wineries for filtering very cloudy wines, fermenting musts, and lees.
How filtration works
The mechanism is elementary but time-tested: the liquid passes through the cotton canvas by natural drop, retaining all unwanted solid substances. The conical shape of the bag with its characteristic vertical folds ensures optimal flow distribution.
Usage instructions
- Soak the filter for about an hour in warm water with citric acid (about 20 g/liter) and potassium metabisulfite (about 3 g/liter)
- Thoroughly rinse with clean water
- Apply a thin layer of diatomaceous earth (about 2 millimeters thick) on the still damp inner surface of the filter
- Mix diatomaceous earth with wine (about 100-500 g/hectoliter)
- Pour the mixture into the filter, which should be placed in a suitable canvas net with upper rings to facilitate suspension and drainage
Important warnings
Before each use, soak the filter in a solution of water and potassium metabisulfite (3 g/liter). Never use scented detergents for rinsing: they may alter the organoleptic characteristics of the wine. Use only clean water or, if necessary, white vinegar.
