How the distillation process works

During the slow heating of the mixture (pomace + 50% water), distillation is divided into three critical phases:
- The head (to be discarded): initially, vapors of volatile substances such as methanol, acetaldehyde, and ethyl acetate develop. They produce an unpleasant odor and are extremely toxic. Methanol can cause severe vision problems leading to blindness or even death, even in small amounts
- The heart (the precious part): from 78.4°C to 100°C. It consists of ethyl alcohol and volatile substances that give aroma and flavor to the distillate. This is the quality fraction
- The tail (to be discarded): above 100°C. It is not dangerous but rich in impurities and amyl oils with unpleasant taste and odor
Infusions: the simple and pleasant alternative
If you prefer a simpler option without legal restrictions, you can create wonderful infusions starting from already distilled grappa or alcohol for liqueurs: nocino, honey grappa, blueberry grappa, and much more.
