- Beneficial chemical reaction: the sulfur compounds present in the pomace chemically bond with copper, improving the quality of the distillate
- Excellent thermal conductor: distributes heat evenly across the entire surface, preventing burning of the distilling mass. It melts at 1083°C, so it withstands high temperatures and thermal shocks

How the distillation process works
The still consists of a boiler (which holds the pomace), a hermetic cap from which a tube called "swan neck" exits. The vapors rise through this tube until they reach a water-cooled coil, where they condense and return to liquid, generating your distillate.
The three phases of traditional distillation
The boiling point of ethyl alcohol (78.4°C) is crucial for the discontinuous process:
- Head (initial vapors): up to 78.4°C, methanol, acetic aldehyde, and ethyl acetate develop, easily recognizable by their unpleasant odor. This fraction is toxic and must be discarded immediately (methanol can cause severe damage to the optic nerve leading to blindness)
- Heart (78.4°C - 100°C): this is the prized part of the distillate, rich in ethyl alcohol and volatile substances that impart aroma and flavor
- Tail (above 100°C): not dangerous to health but contains impurities and amyl alcohols with unpleasant taste and odor
Simple and safe infusions
If you prefer to avoid legal complications, you can create extraordinary infusions starting from bottled grappa or alcohol for liqueurs: nocino, honey grappa, blueberry grappa, and much more, with total freedom.
