The copper still is the ideal tool for distilling wine (to obtain cognac, armagnac, pisco, and brandy), pomace (from which you get grappa), grape must (grape brandy), cider (calvados), sugarcane (rum and cachaça), grains (whiskey, gin, and other spirits), starchy or sugary roots and tubers, and various fruits. A versatile tool that transforms your raw materials into high-quality distillates.
Why copper is the best choice
Our stills are entirely made of copper and handcrafted to ensure you the best quality at the best price. The choice of copper is not random:
- Beneficial chemical reaction: the sulfur compounds present in the pomace chemically bind with copper, improving the final result
- Uniform heat distribution: copper is an excellent thermal conductor that withstands high temperatures (melts at 1083°C) and does not deform or break even with temperature fluctuations. Heat is distributed over the entire surface, preventing burning of the distilling mass
- Durable resistance: copper resists corrosion and the aggression of alcoholic vapors and acids from pomace and fruit

How the distiller works
The still consists of a boiler (where you place the pomace), an airtight cap with a tube called "swan neck" through which the vapors pass, and a water-cooled coil where the vapors condense, returning to liquid and generating your distillate.
The traditional distillation process
The secret to good distillation is the boiling temperature of ethyl alcohol: 78.4 degrees Celsius. In the traditional discontinuous method:
- Load the boiler with a predetermined amount of pomace and water (usually at 50%)
- Begin to heat slowly over the fire: vapors of the most volatile substances (methyl alcohol, acetaldehyde, ethyl acetate) develop
- The "head" (the first vapors with an unpleasant odor): contains toxic and dangerous methanol – must be discarded immediately for safety reasons
- The "heart" (from 78.4°C to 100°C): is the precious part, rich in ethyl alcohol and aromatic substances that give aroma and flavor
- The "tail" (above 100°C): is not dangerous but rich in impurities and amyl oils with unpleasant taste and odor
A simpler alternative: infusions
Without legal restrictions, you can create excellent infusions starting from already distilled grappa or alcohol for liqueurs, obtaining nocino, honey grappa, blueberry grappa, and much more.

- Initial treatment: the first cleaning distillation is essential to eliminate impurities and unwanted substances that settle after long periods of inactivity of the distiller
