The copper still (or distiller) is the ideal tool for obtaining artisanal distillates of excellence. With this instrument, you can distill:
- Wine → cognac, armagnac, pisco, and brandy
- Pomace → grappa
- Grape must → grape brandy
- Cider → calvados
- Sugar cane → rum and cachaça
- Cereals → whisky, gin, and "white" spirits
- Roots, tubers, and various fruits
Why choose copper: 4 fundamental advantages
- Beneficial chemical reaction: The sulfur compounds present in the pomace chemically bond with copper, improving the quality of the distillate
- Excellent thermal conductor: Copper evenly distributes heat (melts at 1083°C), preventing burning of the mass and ensuring stable temperatures even with thermal fluctuations

How the still works
The distiller consists of a boiler (where you place the pomace), a hermetic cap with an outlet tube, a "swan neck" (for vapor passage), and a water-cooled coil where the vapors condense, transforming into liquid distillate.
Phases of traditional (discontinuous) distillation
The process is based on the boiling point of ethyl alcohol (78.4°C). After loading pomace and water (usually at 50%), the boiler is slowly heated:
- The "head" (below 78.4°C): Contains methanol, acetaldehyde, and ethyl acetate. MUST be discarded immediately as it is extremely toxic (risk of blindness or death even in small amounts)
- The "heart" (78.4°C - 100°C): This is the valuable part, rich in ethyl alcohol and aromatic substances that give flavor and aroma to the distillate
- The "tail" (above 100°C): Not dangerous but rich in impurities and fusel oils with unpleasant odor and taste
Infusions and simple preparations
If you prefer simpler methods without legal restrictions, you can create excellent infusions starting from bottled grappa or alcohol for liqueurs: nocino, honey grappa, blueberry grappa, and much more.

- First use: Before starting, perform a cleaning distillation to eliminate impurities and substances deposited by copper during storage
