How the distiller works
The still consists of a boiler that houses the material to be distilled, an airtight cap with an outlet tube (the characteristic "swan neck"), and a water-cooled coil where vapors condense and return to liquid, generating the final distillate.
The traditional distillation process
In the classic discontinuous method, a mixture of pomace and water (generally at 50%) is inserted and slowly heated. During heating, depending on the temperature reached, three phases are obtained:
- The "head" (below 78.4°C): Contains methanol, acetaldehyde, and ethyl acetate - very toxic substances that must be discarded immediately. Methanol can cause severe vision problems up to blindness or be fatal;
- The "heart" (78.4°C - 100°C): The precious part! Composed of pure ethyl alcohol and volatile substances that give aroma and flavor to the distillate. This is the fraction to collect;
- The "tail" (above 100°C): Not dangerous to health but rich in impurities and amyl oils with an unpleasant taste, to be discarded.
Infusions: the simple and legal alternative
If you prefer a simpler approach without legal restrictions, you can create extraordinary infusions starting from bottled grappa or alcohol for liqueurs: nocino, honey grappa, blueberry grappa, and many more.

- The distiller does not have a thermometer: it requires constant attention and manual control during use;
